Exotic pineapple coconut smoothie.

Used product: Chivers Lemon Curd
Preparation time: approx. 15 minutes
For 2 portions:
Ingredients:
– 1 pineapple
– 3 passion fruits
– ½ tsp coriander, ground
– ½ tsp curry powder, mild
– 1 pinch of chili, ground
– 100 g Chivers Lemon Curd
– 250 ml of coconut water
– 2 tablespoons coconut chips
– 2 stalks lemon balm
Utensils: knife, board, blender, 2 glasses (à 400 ml)
Preparation:
1. Quarter the pineapple and remove stalk. Peel and chop roughly. Quarter the remaining pineapple again and set aside.
2. Halve the passion fruits and trigger pulp. Put pineapple and passion fruit with coriander, curry and chilli powder in a blender. Add Chivers Lemon Curd and top up with coconut drink. Puree at the highest level.
3. Wash balm and shake it dry. Fill smoothies into jars (400 ml) and garnish with pineapple carving, coconut chips and lemon balm.
